The Sun Cocktail - Mango & Thai Chili

 

Ingredients

  • 2 oz mango infused dark rum*

  • 1/2 oz Amaro Montenegro

  • 1 bar spoon simple syrup

  • 2 sleeves Summer Solstice Mango & Thai Chili Bitters

  • Glassware: Rocks

  • Garnish: Fresh orange peel

Method

  1. add all ingredients to a mixing glass add ice & stir thoroughly

  2. strain into a rocks glass over fresh ice cubes

  3. Then garnish with an orange peel expressed over the glass

Mango Infused Rum

1 ripe mango, peeled & chopped
1 cup dried mango
16 oz dark rum, any brand works, choose your favorite

  1. Add all ingredients to a 32 oz (or larger) container that has a lid

  2. Shake, (or stir) all ingredients together then infuse at room temperature for 1-2 weeks

    1. shake/stir daily,

  3. after desired flavor achieved strain out solids, reserving liquid in a bottle or airtight container

    1. infused rum will be shelf stable room temperature for 1 year, or refrigerated indefinitely (probably)
