Summer Solstice Mango & Thai Chili Sorbet
Ingredients
3 cups frozen mango chunks
2 oz lime juice
2 oz agave syrup (or simple syrup)
1 oz unsweetened coconut cream
1 oz water
2 oz rum (optional)*
pinch of salt & chili
2 tsp Summer Solstice Mango & Thai Chili Bitters
*replace with water, or even fruit juice
Method
Add all ingredients to a blender & Blend until very smooth
tip, you may need to add more water to thin out the mixture depending on your blender
2. make sure the mixture is very smooth, you can strain this through a sieve if necessary
3. Once fully blended, add to a freezer safe container (such as a large Tupperware, cake pan, etc.) Freeze overnight, or at least 4 hours
4. Once frozen thoroughly, scoop into individual serving dishes, dust with Tajin or Thai Chili Flakes (optional) and serve immediately.
