Equinox Loaf Cake!

 

Ingredients

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • 1/2 tsp nutmeg

  • 1/4 tsp ground turmeric

  • 3/4 tsp salt

  • 1/2 cup sugar

  • 2 eggs

  • 1/2 cup honey

  • 1 stick unsalted room temp butter

  • 1 TBS Autumn Equinox Carrot Turmeric Bitters

  • Zest of 1 orange

Method

  1. Pre-heat oven to 350 F

  2. Butter a loaf pan and line it with a strip of parchment paper for easy removal after baking

  3. In a large bowl with a handheld mixer, beat eggs, sugar, and honey together until the sugar is dissolved

  4. Add butter, bitters and orange zest and beat until fully incorporated

  5. In a separate bowl, sift together the flour, cinnamon, ginger, nutmeg, baking powder, baking soda, and salt.

  6. Add the dry ingredients into the wet and mix just until combined

  7. Pour the batter into the prepared loaf pan and bake for approximately 40 minutes or until a cake tester comes out clean.

  8. Remove from pan, drizzle with glaze and enjoy warm

GLAZE Ingredients & Method

  • 1/2 cup powdered sugar

  • 1 TBS honey

  • 1 TBS milk or cream

  • 1 TBS unsalted butter (melted)

  • 1/2 tsp cinnamon

  • 1/4 tsp ground ginger

  • 1 tsp Autumn Equinox Carrot Turmeric Bitters

  • Pinch of salt

    1. Whisk together all ingredients until well combined

  • 2. Drizzle over the warm cake
