Coconut Macaroons with Lime Leaf Glaze

 

Ingredients

  • 1, 14-oz bag sweetened flaked coconut

  • 3/4 cup plus 2 TBS sweetened condensed milk

  • 1 tsp Summer Solstice Lime Leaf bitters

  • 2 large eggs whites

  • 1/4 teaspoon salt

Lime Glaze ingredients:

  • 2 tsp Summer Solstice Lime Leaf bitters

  • 1 tsp milk

  • 1/4 cup powdered sugar

  1. Whisk all together to form pourable consistency, drizzle over cooked macaroons

Instructions

  1. In a medium bowl, mix together the coconut, sweetened condensed milk & bitters. Set aside.

  2. Preheat oven to 350

  3. In the bowl of an electric mixer, beat the egg whites and salt until stiff peaks form. Use a large rubber spatula to fold the egg whites into the coconut mixture.

  4. Using a mini ice cream scoop form heaping mounds & gently flatten with your palm onto baking sheets lined with parchment paper & space about 1" apart.

  5. Bake for 20 to 25 minutes, rotating the pans halfway through until golden.

  6. Transfer to a wire rack to cool completely.

  7. Drizzle cooled macaroons with lime leaf bitters glaze.
