Coconut & Lime Leaf Rice
Ingredients
3 cups cold water
1 cup coconut milk
2 cups jasmine rice
1 small piece fresh ginger, shredded using a microplane
optional - 2 fresh long red chilies, chopped coarsely
1 TBS Summer Solstice Lime Leaf bitters
Instructions
Combine all ingredients except the bitters in large saucepan with a lid; bring to a boil.
Reduce heat; cook, covered, about 12 minutes or until all liquid is absorbed and rice is tender.
Do not remove lid or stir rice during cooking time.
Remove from heat; let rice stand, covered, 10 minutes to cool & continue cooking
Stir bitters into rice & fluff with a fork.
Serve with veggies or meat.
