Coconut & Lime Leaf Rice

 

Ingredients

  • 3 cups cold water

  • 1 cup coconut milk

  • 2 cups jasmine rice

  • 1 small piece fresh ginger, shredded using a microplane

  • optional - 2 fresh long red chilies, chopped coarsely

  • 1 TBS Summer Solstice Lime Leaf bitters

Instructions

  1. Combine all ingredients except the bitters in large saucepan with a lid; bring to a boil.

  2. Reduce heat; cook, covered, about 12 minutes or until all liquid is absorbed and rice is tender.

    • Do not remove lid or stir rice during cooking time.

  3. Remove from heat; let rice stand, covered, 10 minutes to cool & continue cooking

  4. Stir bitters into rice & fluff with a fork.

  5. Serve with veggies or meat.
