Winter Solstice BBq Sauce

 

Ingredients:

1 small yellow onion, finely chopped

2 TBS butter

1/2 TBS fresh chopped rosemary

1 cup Root Beer

1, 8-ounce can of tomato sauce

1/4 cup tomato paste

1/2 cup apple cider vinegar

1/2 cup lemon juice

2 TBS dijon mustard

1 TBS Worcestershire sauce

1 TBS Maple Syrup

1 TBS Brown Sugar

1 tsp each:

  • black pepper

  • chili powder

  • cumin

  • paprika

  • garlic powder

1/4 tsp ground cinnamon

1/4 tsp ground nutmeg

Salt to taste

2 TBS Winter Solstice Sarsaparilla Bitters

3 TBS Whiskey

Instructions:

  1. Add onion & butter to a sauce pan and cook on medium until onion is translucent and fully cooked.

  2. Then, add the rest of the ingredients, except for whiskey & bitters, to a large saucepan.

  3. Whisk to combine and heat over medium until sauce comes to a controlled boil.

  4. Then, reduce the heat and allow sauce to simmer, stirring occasionally, for 20 to 30 minutes, until thickened.

  5. Then, once thick remove from heat and add the whiskey & bitters, allow it to cool. The sauce will continue to thicken as it cools.

  6. Once cooled, blitz sauce in a blender (or with an emersion blender) until fully smooth.

  7. Transfer sauce to an airtight container and refrigerate until ready to use. Sauce should keep up to 4 weeks.

  8. Use as marinade for tofu, meats, or as a dipping sauce.
