Winter Solstice BBq Sauce
Ingredients:
1 small yellow onion, finely chopped
2 TBS butter
1/2 TBS fresh chopped rosemary
1 cup Root Beer
1, 8-ounce can of tomato sauce
1/4 cup tomato paste
1/2 cup apple cider vinegar
1/2 cup lemon juice
2 TBS dijon mustard
1 TBS Worcestershire sauce
1 TBS Maple Syrup
1 TBS Brown Sugar
1 tsp each:
black pepper
chili powder
cumin
paprika
garlic powder
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
Salt to taste
2 TBS Winter Solstice Sarsaparilla Bitters
3 TBS Whiskey
Instructions:
Add onion & butter to a sauce pan and cook on medium until onion is translucent and fully cooked.
Then, add the rest of the ingredients, except for whiskey & bitters, to a large saucepan.
Whisk to combine and heat over medium until sauce comes to a controlled boil.
Then, reduce the heat and allow sauce to simmer, stirring occasionally, for 20 to 30 minutes, until thickened.
Then, once thick remove from heat and add the whiskey & bitters, allow it to cool. The sauce will continue to thicken as it cools.
Once cooled, blitz sauce in a blender (or with an emersion blender) until fully smooth.
Transfer sauce to an airtight container and refrigerate until ready to use. Sauce should keep up to 4 weeks.
Use as marinade for tofu, meats, or as a dipping sauce.
