Roasted Cauliflower Tacos
Ingredients
3 tablespoons olive oil
1 tablespoons maple syrup
2 teaspoons tamarind paste
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1 tsp chipotle powder
2 tsp of Tamarind Chipotle bitters
1 medium head of cauliflower, chopped into chunks
1 large red bell pepper, sliced into strips (or any veggies of choice)
Corn Tortillas
Instructions
whisk first 5 ingredients into a sauce
set aside 1/2 TBS of the sauce
mix the remaining sauce with the veggies, place on baking sheet and roast for 30 min @ 350°
when veggies are done drizzle the reserved 1/2 TBS of sauce over cooked veggies
heat up, or grill corn tortillas
Top with slaw, chopped cilantro, cotija cheese or any toppings of your choice
Apple & Cabbage Slaw Recipe:
Ingredients
1 large apple, sliced into thin strips
1/4 cabbage, sliced thinly
Juice from 1 lime
2 sleeves Tamarind Chipotle Bitterspinch salt
splash of olive oil
Instructions
Combine lime juice, salt & bitters
drizzle over chopped cabbage & apples
let sit to marinate while prepping tacos
