Roasted Cauliflower Tacos

 

Ingredients

  • 3 tablespoons olive oil

  • 1 tablespoons maple syrup

  • 2 teaspoons tamarind paste

  • 1 teaspoon kosher salt

  • 1/2 teaspoon garlic powder

  • 1 tsp chipotle powder

  • 2 tsp of Tamarind Chipotle bitters

  • 1 medium head of cauliflower, chopped into chunks

  • 1 large red bell pepper, sliced into strips (or any veggies of choice)

  • Corn Tortillas

Instructions

  1. whisk first 5 ingredients into a sauce

  2. set aside 1/2 TBS of the sauce

  3. mix the remaining sauce with the veggies, place on baking sheet and roast for 30 min @ 350°

  4. when veggies are done drizzle the reserved 1/2 TBS of sauce over cooked veggies

  5. heat up, or grill corn tortillas

  6. Top with slaw, chopped cilantro, cotija cheese or any toppings of your choice

Apple & Cabbage Slaw Recipe:

Ingredients

  • 1 large apple, sliced into thin strips

  • 1/4 cabbage, sliced thinly

  • Juice from 1 lime
    2 sleeves Tamarind Chipotle Bitters

  • pinch salt

  • splash of olive oil

Instructions

  1. Combine lime juice, salt & bitters

  2. drizzle over chopped cabbage & apples

  3. let sit to marinate while prepping tacos
