Shortbread Cookies

 

Ingredients

  • 2 cups all-purpose flour

  • 1/2 tsp sea salt

  • 1 cup room temp. unsalted butter

  • 3/4 cup powdered sugar

  • 1 TBS lime zest

  • 1 TBS Thai Curry Bitters

Method

  1. Whisk together flour and salt in a bowl

  2. In a separate bowl, with an electric mixer, beat the butter, powdered sugar, zest and bitters together until well mixed

  3. Then slowly add in the flour mixture until fully combined, don’t over mix

  4. Divide the dough in half. Place each half onto a sheet of parchment paper and roll into a log
    Twist the ends of the parchment (or plastic wrap) and refrigerate dough for one hour

  5. Preheat the oven to 350°.

  6. After an hour remove parchment from logs and cut dough into 1/4 inch thick slices.

  7. Place the slices 1 inch apart on parchment lined baking sheet

  8. Bake for about 15 to 17 minutes or until the cookies are golden around the edges.

  9. Cool before serving
