Pizza with Pear & Chicory Balsamic Reduction

 

Ingredients

  • 3 slices bacon

  • 1 onion, caramelized

  • handful of arugula

  • 4 ounces blue cheese, crumbled

  • 2 tsp olive oil

  • 1 pear, thinly sliced

  • 1 home-made or store-bought pizza crust

    for balsamic reduction:

  • 1/4 balsamic vinegar

  • 1 tsp pear & chicory bitters

*balsamic reduction method: place balsamic vinegar in a saucepan over medium heat & gently boil, then turn down and simmer for about 10 minutes, (or until it has reduced and thickened), remove from heat & stir in 1 tsp bitters, use immediately.

Instructions

  1. Prepare all ingredients:

    • make & pre-cook (or heat up store-bought) pizza crust

    • caramelize the onions

    • cook & crumble bacon

  2. When ready to assemble: drizzle the whole pizza with olive oil, cover with the caramelized onions, crumbled blue cheese & arrange the pear slices across the top

  3. Place pizza in the oven for 15-20 minutes, or until the edges are golden brown.

  4. Remove the pizza, then top with the crumbled bacon and fresh arugula.

  5. Drizzle the balsamic reduction all over the pizza & serve.
