Pizza with Pear & Chicory Balsamic Reduction
Ingredients
3 slices bacon
1 onion, caramelized
handful of arugula
4 ounces blue cheese, crumbled
2 tsp olive oil
1 pear, thinly sliced
1 home-made or store-bought pizza crust
for balsamic reduction:
1/4 balsamic vinegar
1 tsp pear & chicory bitters
*balsamic reduction method: place balsamic vinegar in a saucepan over medium heat & gently boil, then turn down and simmer for about 10 minutes, (or until it has reduced and thickened), remove from heat & stir in 1 tsp bitters, use immediately.
Instructions
Prepare all ingredients:
make & pre-cook (or heat up store-bought) pizza crust
caramelize the onions
cook & crumble bacon
When ready to assemble: drizzle the whole pizza with olive oil, cover with the caramelized onions, crumbled blue cheese & arrange the pear slices across the top
Place pizza in the oven for 15-20 minutes, or until the edges are golden brown.
Remove the pizza, then top with the crumbled bacon and fresh arugula.
Drizzle the balsamic reduction all over the pizza & serve.
