Citrus Salad

 

Ingredients

  • 1 tsp grapefruit zest

  • 1/2 shallot, finely chopped

  • 2 Tbsp. white wine vinegar

  • 2 Tbsp. olive oil

  • 1 Tbsp. grapefruit juice

  • 1 Tbsp. dijon mustard

  • 1 tsp. honey

  • 1/2 tsp Summer Solstice Chamomile Bitters

  • salt, pepper + chili flakes to taste

SALAD Fixins
6 cups baby greens
1 medium pink grapefruit
1/2 cup crumbled feta cheese
1 avocado, peeled and diced chopped tomato
1/4 cup roughly chopped pistachios

Instructions

  1. Zest 1 tsp of grapefruit peel from a grapefruit, and add to bowl

  2. With a sharp knife, cut the skin and all of the bitter white pith off of the grapefruit.

  3. Working over a new bowl & cut in between the membranes to release the sections.

  4. Reserve 1 TBS grapefruit juice

  5. Add the reserved 1 TBS of grapefruit juice + rest of dressing ingredients to a bowl and whisk until fully combined, set aside

  6. add salad greens, avocado, grapefruit, cheese & nuts to a separate bowl and toss

  7. drizzle on dressing & mix to fully coat salad
