When local distiller, Beehive Distilling took their 7 year barrel aged gin (one of the oldest aged gins ever made) out of it’s cask we knew we needed to barrel aged some bitters in it!
Together with their Head Distiller, Chris Barlow, and their bar program manager, Kelsey Terrell we choose one of our existing bitters flavors we thought would perfectly compliment the barrel, Burnt Honey Hops.
We made a special recipe for this project; we added some of Beehive Distilling’s Jack Rabbit Gin as the base, plus myriad of familiar locally sourced ingredients from hops to fresh coriander, and of course, honey! We then added some additional carefully selected bitter roots, barks, and herbs to round out this gin-forward & herbal flavor. The honey is extra special as it was harvested by The Hive Mind Apiary in autumn which imparts additional notes of Utah Juniper & Sage, which as usual, we cooked down to near-burnt status for that extra richness!
It was then entrusted with time, 6 months, to mellow in this 7 year Gin Barrel.
The cask took the balanced fruity characteristics and warm earthiness of our Burnt Honey Hops Bitters to another level with rich notes of caramel, juniper & char, to create a truly one of a kind Barrel Aged Bitters.
We take great pride in creating thoughtfully crafted products that showcase this beautiful state we hail from. Supporting other like-minded makers within our community is also important to us, which is why collaborating with Beehive Distilling, Top Crops, and The Hive Mind Apiary on this barrel-aged bitters project resulted in the perfect recipe to represent the beehive state.
