Eclipse Bitters
It’s no secret that we are obsessed with Amaro. So when the chance to work with Waterpocket Distillery came up, we knew it would be an incredible adventure.
Alan at Waterpocket crafted a beautiful Amaro, Hartnet as he calls it, to signify Hartnet Road in Capitol Reef National Park in Utah. Working together, we used some of the same, beautiful botanicals in the Hartnet for a one-of-a-kind Aromatic-like flavor we’ve called Eclipse Bitters. This flavor was crafted to compliment the Hartnet Amaro.
Called Eclipse, as the timing of creating this flavor was perfectly in sync with the October 14th, 2023 Annular Solar Eclipse. We made it in the weeks leading up to the Eclipse, and it finished processing in the 24 hours just before the Eclipse. Then, since we’d have 100% visibility in our home state, we decided to take the trek to Southern Utah, Kodachrome Basin State Park to be exact, to get in on that full Eclipse Magic.
We began our adventure at 7 am, making our way from our camping spot to a secluded area within the park to watch the Eclipse. We arrived, made breakfast, had some coffee then secured our perch atop a hill.
At 9:09 am we placed a small vial of our finished Bitters on the hilltop in the sun, we left the vial there for the full duration of the Eclipse. At 11:56 am we packet up our vial, gave thanks to the Universe for allowing us to experience something so rare and beautiful then went about our merry way, enjoying the rest of the weekend in the desert.
When we returned to the Bitters Lab, we added the liquid from that special vial into the full batch, we bottled her up, nice and tight, and gave her a stylish jacket.
Designs were created by Dan Hammond, who does all of Waterpocket Distilleries labels. We knew, this batch being an extra special flavor, and truly unlike anything we’ve done, that we had to create a label that would match.
This story is a fun part of the creation of this flavor, but we think the bitters really speak for themselves. The flavor is bold & aromatic-like. We used some Haitian bitter orange peel, Sarsaparilla Root, Fennel and an array of other herbs, spices, and botanicals (20 in total) to craft this flavor, it’s finished with a little honey, a nod to the Hartnet.
It’s a familiar aromatic-like flavor with a lot more nuance and intrigue that holds you in it’s grasp, and makes you long for more.
Eclipse Bitters and Hartnet are a fantastic pair. Mix the two together in a cocktail, better yet plop yourself next to a campfire under the desert stars, and you’ve got the perfect evening.
