Winter Rice Pilaf
Ingredients
2 tablespoons butter
1 small yellow onion, finely chopped
1 clove garlic, minced
2 medium carrots, finely chopped
1 cup long grain rice
1 tsp schwarma spice blend
2 cups chicken or vegetable broth
1/2 cup chopped nuts (any kind)
1/4 cup raisins or currants (optional)
1 tsp Winter Solstice Banana Hickory Nut Bitters
1/4 cup finely chopped parsley
Serving suggestions:
Serve with roasted tomatoes, chickpeas & root veggies + a drizzle of lemon sour cream & fresh parsley
also makes a great accompaniment to grilled fish, chicken, lamb or soups & curries.
METHOD
In a large saucepan, melt butter.
Add onion, garlic, carrots & nuts. Cook on medium-high heat until onion is translucent & begins to brown 5-8 minutes.
Add spice blend & salt, cook for another minute until spices become fragrant
Add rice, cook, stirring frequently, until rice is lightly browned.
Then, add dried fruit and the broth. Boil for 2 minutes.
Once boiling, reduce heat to medium low, cover and cook 15- 20 minutes, or until rice is cooked through and fluffy.
When rice is fully cooked, remove lid, stir in Winter Solstice Banana Hickory Nut bitters and fluff rice with a fork.
Top rice with warmed banana slices, chopped parsley & lemon sour cream.
