Winter Rice Pilaf

 

Ingredients

  • 2 tablespoons butter

  • 1 small yellow onion, finely chopped

  • 1 clove garlic, minced

  • 2 medium carrots, finely chopped

  • 1 cup long grain rice

  • 1 tsp schwarma spice blend

  • 2 cups chicken or vegetable broth

  • 1/2 cup chopped nuts (any kind)

  • 1/4 cup raisins or currants (optional)

  • 1 tsp Winter Solstice Banana Hickory Nut Bitters

  • 1/4 cup finely chopped parsley

Serving suggestions:
Serve with roasted tomatoes, chickpeas & root veggies + a drizzle of lemon sour cream & fresh parsley
also makes a great accompaniment to grilled fish, chicken, lamb or soups & curries.

METHOD

  1. In a large saucepan, melt butter.

  2. Add onion, garlic, carrots & nuts. Cook on medium-high heat until onion is translucent & begins to brown 5-8 minutes.

  3. Add spice blend & salt, cook for another minute until spices become fragrant

  4. Add rice, cook, stirring frequently, until rice is lightly browned.

  5. Then, add dried fruit and the broth. Boil for 2 minutes.

  6. Once boiling, reduce heat to medium low, cover and cook 15- 20 minutes, or until rice is cooked through and fluffy.

  7. When rice is fully cooked, remove lid, stir in Winter Solstice Banana Hickory Nut bitters and fluff rice with a fork.

  8. Top rice with warmed banana slices, chopped parsley & lemon sour cream.
