Pear & Endive Salad
For the salad:
1 large pear, sliced (any way you want)
Vegetable oil spray
2 large handfuls mixed greens
2 heads red endive leaves, torn
1/4 cup roughly chopped walnuts
1/4 cup crumbled Feta
1/4 cup chopped tomato
1/4 cup dried blueberries, cherries or fresh grapes
For the vinaigrette:
1/4 cup apple cider vinegar
Juice of 1/2 lemon
1 shallot minced
2 TBS maple syrup
1/4 cup Olive Oil
Pinch of salt & Pepper
1 TBS chopped flat leaf parsley
1 TBS Queen of the Woods Bitters
Instructions:
Heat a grill or pan over medium-high heat.
Spray the pear with vegetable oil and grill until lightly charred on both sides, then set aside to cool.
Prepare the salad: chop walnuts & tomatoes - add all salad fixings to a large bowl & toss gently.
In a mason jar (or bowl with a whisk), add all of the vinaigrette ingredients - then shake (or whisk) until fully combined & emulsified.
Portion salad onto plates & drizzle the vinaigrette over the salad top each with some grilled pear wedges & a sprinkle of flaky sea salt.
