Pear & Endive Salad

 

For the salad:

  • 1 large pear, sliced (any way you want)

  • Vegetable oil spray

  • 2 large handfuls mixed greens

  • 2 heads red endive leaves, torn

  • 1/4 cup roughly chopped walnuts

  • 1/4 cup crumbled Feta

  • 1/4 cup chopped tomato

  • 1/4 cup dried blueberries, cherries or fresh grapes

For the vinaigrette:

  • 1/4 cup apple cider vinegar

  • Juice of 1/2 lemon

  • 1 shallot minced

  • 2 TBS maple syrup

  • 1/4 cup Olive Oil

  • Pinch of salt & Pepper

  • 1 TBS chopped flat leaf parsley

  • 1 TBS Queen of the Woods Bitters

Instructions:

  1. Heat a grill or pan over medium-high heat.

  2. Spray the pear with vegetable oil and grill until lightly charred on both sides, then set aside to cool.

  3. Prepare the salad: chop walnuts & tomatoes - add all salad fixings to a large bowl & toss gently.

  4. In a mason jar (or bowl with a whisk), add all of the vinaigrette ingredients - then shake (or whisk) until fully combined & emulsified.

  5. Portion salad onto plates & drizzle the vinaigrette over the salad top each with some grilled pear wedges & a sprinkle of flaky sea salt.
